Watercress-Cucumber Sandwiches

1 (3-ounce) package cream cheese, softened
1/3 cup minced fresh watercress
8 sandwich bread slices
1 small seedless cucumber, cut into 24 thin slices
1/8 teaspoon salt
1/8 teaspoon pepper
Stir together cream cheese and watercress in a small bowl.
Remove crusts from bread; spread 1 side of each slice with cream cheese mixture. Top 4 bread slices with cucumber; sprinkle with salt and pepper. Top with remaining bread slices, cheese side down.
Cut sandwiches into 4 triangles; chill, if desired.
