Three-Pepper Salad

2 green peppers
2 sweet red peppers
2 sweet yellow peppers
2 tablespoons olive oil
1/2 teaspoon dried whole thyme
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 cups jicama strips
Seed peppers and cut into 1/4-inch strips. Saute peppers in oil 5 minutes or until crisp-tender. Stir in seasonings. Chill. Before serving, stir in jicama.
