2 tablespoons minced fresh or 2 teaspoons dried thyme
2 tablespoons minced fresh or 2 teaspoons dried oregano
2 tablespoons minced fresh or dried rosemary
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 to 1/3 teaspoon ground red pepper
2 (1 1/2-pound) sirloin steak, cut into 1-inch cubes
Garnish: fresh oregano sprigs
Combine first 6 ingredients in a small bowl; crush mixture with the back of a spoon and place in a heavy-duty zip-top plastic bag.
Add steak cubes to bag; seal and shake to coat.
Thread steak cubes onto skewers; cover and chill up to 2 hours.
Grill, without grill lid, over medium-high heat (350 to 400) 5 minutes on each side. Garnish, if desired.
Spicy Grilled Hamburgers: Sprinkle seasoning mixture evenly on 8 ground beef patties; press gently into meat. Grill patties over medium-high heat (350 to 400) 5 minutes on each side or until no longer pink.
