Spicy Beef and Black Beans

2 (10-ounce) cans Mexican diced tomatoes and green chiles, drained
2 (15-ounce) cans black beans, rinsed and drained
1 medium onion, diced
2 garlic cloves, minced
1 pound boneless beef sirloin, thinly sliced
2 cups (8 ounces) shredded Monterey Jack cheese with peppers
Hot cooked yellow rice

Stir together first 4 ingredients. Layer half of beef in a lightly greased 11- x 7-inch baking dish; top with half of tomato mixture. Repeat procedure.
Bake at 350 for 30 minutes. Sprinkle with cheese and bake 5 more minutes. Serve over rice.
