Roasted Caraway Potatoes

3 pounds new potatoes, unpeeled and quartered
2 medium onions, sliced
1/4 cup olive oil
1 tablespoon caraway seeds
1 1/2 teaspoons salt
1 teaspoon pepper
Combine all ingredients in a large bowl or zip-top plastic bag. Stir mixture in bowl, or seal bag, and shake well to coat. Place potatoes in an ungreased 13- x 9- x 2-inch baking pan.
Bake at 400 for 1 hour or until tender, stirring occasionally.
