Real Southern Cornbread

1 cup sour milk
1/4 tsp soda dissolved in 1 tsp water
1 egg yolk
1/2 tsp salt
1 1/2 cups cornmeal
1 egg white, beaten stiff
Mix ingredients in order given. Heat 2 tbsp of butter or shortening in a heavy iron skillet. When sizzling hot, pour half the grease into the bread mixture. Mix gently. Pour the batter into the hot skillet and bake in a moderate oven for 20 minutes. To save time, us the whole egg at one time, instead of separating it, but the texture will not be as good.
