Poached Salmon with Honey-Mustard Sauce

2 pounds fresh salmon fillets, skin and all the small bones removed
3 cups fish broth, chicken broth, or skim milk
3/4 cup light or lowfat sour cream
3 tablespoons honey
1 tablespoon Dijon-style prepared mustard
2 teaspoons mustard seeds, coarsely crushed

Place salmon, with side from which skin was removed down, in a large, shallow microwave-safe dish; add broth or milk. Cover and microwave on high (100 percent) for 7 to 9 minutes or until cooked through.
While salmon is cooking, make the sauce. In small bowl, stir together the remaining ingredients. Place sauce in a sauceboat.
When salmon is cooked, using two spatulas, carefully transfer to a serving platter. Serve immediately.
