8 tablespoons (1 stick) margarine or butter, softened
1/2 cup vegetable shortening
1 1/2 cups plus 2 tablespoons sugar
2 eggs
1 teaspoon vanilla extract
2 2/3 cups sifted all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Heat the oven to 400 degrees.
Cream together the margarine (or butter) and shortening in a large bowl until light. Add the 1 1/2 cups sugar and beat until fluffy. Beat in the eggs and vanilla.
Sift together the flour, cream of tartar and baking soda. Add to the margarine (or butter) mixture. Mix well. Combine the cinnamon and the 2 tablespoons sugar.
With your palms, roll the dough into 1-inch balls. Roll the balls in the cinnamon mixture and arrange 2 inches apart on an ungreased baking sheet.
Bake for 8 to 10 minutes. Remove and cool on racks.
