4 pork chops (about 1/2 inch thick)
1/4 cup all-purpose flour
2 eggs
2 tablespoons water or milk
1 cup bread crumbs
3 tablespoons vegetable oil
Dust chops with flour. Beat eggs with water or milk and dip each chop in mixture. Put bread crumbs in a paper bag; add one chop at a time, shaking like crazy to coat each chop with crumbs. In a large skillet, heat oil over medium-high heat. Add chops and fry 4 to 5 minutes on each side, or until well done. Serve all chops to Homer.
For a slightly more sophisticated version, season chops with 1 teaspoon thyme before dusting with flour; use 1 egg and 1 tablespoon w water instead of 2. After cooking chops, deglaze pan by stirring in 1/2 cup sherry and 1 teaspoon tamari over high heat until sauce is reduced by half; pour sauce over chops. Serves four normal people.
