Lemony Rice

2 tablespoons butter or margarine
1 1/4 cups uncooked long-grain rice
2 1/2 cups chicken broth
1 1/2 teaspoons grated lemon rind
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon ground white pepper
2 tablespoons chopped fresh parsley
Melt butter in a medium saucepan over medium-high heat; add rice and saute 2 minutes or until lightly browned. Stir in chicken broth and next 4 ingredients; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is tender. Stir in chopped parsley and serve immediately.
