2 tablespoons fat-free sour cream
2 tablespoons cooked or canned black beans, rinsed and drained
2 tablespoons minced red bell pepper
2 tablespoons minced green bell pepper
1 tablespoon minced scallions
1/4 teaspoon salt
Freshly ground pepper, to taste
8 (10-inch) fat-free flour tortillas
To prepare the filling, combine the sour cream, beans, red and green bell peppers, scallions, salt, and pepper in a small bowl.
Spread 2 tablespoons of the filling on 1 tortilla. Place another tortilla on top and press lightly. Lightly spray both sides of the quesadilla with nonstick spray to make 4 quesadillas.
Spray a nonstick ridged grill pan or nonstick skillet with nonstick spray and set over medium heat. Cook the quesadillas until crisp and heated through, 2-3 minutes on each side. Cut into quarters.
