
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 egg whites
1 cup Kellogg's All-Bran cereal
2 tablespoons vegetable oil
1/3 cup molasses
3/4 cup hot water
1/2 cup raisins
In a small bowl, combine flours, baking soda, salt and cinnamon. Set aside. In a medium-sized mixing bowl, beat egg whites slightly. Add Kellogg's All-Bran cereal, oil, molasses, hot water and raisins; let stand for 5 minutes or until cereal softens. Beat well. Add dry ingredients, mixing only until combined. Spread batter evenly onto 8 x 4 x 2-inch loaf pan coated with cooking spray.
Bake at 350 degrees F for 35 minutes or until wooden pick inserted near center comes out clean. Remove from pan and cool. Serve warm or cold. Keep refrigerated.
