Gingerbread Persons

1/2 cup butter
1/2 cup brown sugar
1/2 cup molasses
1 egg
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon ginger
1 teaspoon cinnamon and nutmeg

Cream butter and sugar, then beat in molasses and egg. Stir in dry ingredients. Turn out mixture onto plastic wrap, form into a ball, and wrap well. Chill for 1 hour. Preheat oven to 350 and grease cookie sheets. Divide dough into quarters and roll dough 1" thick. Cut into shapes with a floured cookie cutter and place on cookie sheets, leaving about 1 1/2 inch between each. Reroll scraps and cut out more shapes until dough is used up. Bake for 10 minutes or until done. Transfer cookies onto racks and allow to cool completely before frosting.
