Fast Nicoise Salad

1 tablespoon butter
2 cups refrigerated red potato wedges
6 cups packed mixed salad greens
2 5-ounce pouches or cans lemon-pepper chunk light tuna
1 cup cherry tomatoes, halved
1/3 to 1/2 cup bottled roasted garlic vinaigrette salad dressing
Melt 1 tablespoon butter over medium high heat in large skillet. Add potatoes. Cover and cook about 15 minutes or until golden, stirring occasionally.
Meanwhile, place greens on plates. Top with tuna, tomatoes, and potatoes. Drizzle vinaigrette. Season with salt and pepper.
