Easy Beef Roast

1/3 cup all-purpose flour
1 (12-ounce) can vegetable juice cocktail
1 (3- to 3 1/2-pound) boneless chuck roast

Combine flour and vegetable juice in a roasting bag. Close bag; shake to dissolve flour. Place bag in a 12- x 8- x 2-inch baking dish. Pierce roast with a fork at 1/2-inch intervals, and place in bag, turning to moisten. Tie bag securely with enclosed plastic tie (do not use a metal twist tie). Cut 6 (1/2-inch) slits in top of bag.
Microwave at MEDIUM LOW (30% power) 33 to 37 minutes per pound or to desired degree of doneness, giving dish a half-turn every 30 minutes. Let stand 10 to 15 minutes in bag before serving.
