
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon each baking soda and salt
1 tablespoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 large egg
1 cup dark molasses
2/3 cup milk
1/3 cup butter or margarine, melted
1 cup cranberries, chopped very coarse
1/4 cup granulated sugar
1 tablespoon freshly grated orange peel
Heat oven to 350. Grease a 13x9x2-inch baking pan. Mix flour, baking powder, baking soda, salt, and spices in a large bowl. Beat egg with whisk or fork in a medium-size bowl. Add molasses, milk, and butter; mix well. Add to flour mixture; stir until well blended. Mix cranberries, sugar, and orange peel in a small bowl; stir about half into the batter. Scrape batter into prepared pan; spoon remaining cranberry mixture over the top. Bake 40 minutes or until pick inserted near center comes out clean. Cool in pan on wire rack. Makes 12 servings.
