Crab-Rice Primavera

1 tablespoon olive oil
2 cloves garlic, minced
1 red bell pepper, cut into 2- x 1/2-inch strips
2 cups broccoli flowerets
1 medium-size yellow squash, sliced
1/4 cup water
1 (8-ounce) package imitation crabmeat
2 cups hot, cooked rice
1/2 cup chopped fresh basil leaves
1/2 cup (2 ounces) shredded Parmesan cheese

Heat oil in large skillet over medium-high heat. Add garlic, and cook 1 minute. Add bell pepper strips; cook 1 minute.
Add broccoli, squash, and 1/4 cup water to skillet; cover and simmer 5 minutes or until vegetables are tender. Add imitation crabmeat and next 3 ingredients, stirring gently; cover and cook 2 to 3 minutes or until thoroughly heated. Serve immediately.
Yield: 4 servings
