
1 canned chipotle chile in adobo sauce, seeded
1/2 teaspoon abodo sauce, from can
1/4 teaspoon salt
2 tomatillos, papery skin removed
1 tablespoon oil
4 chicken breast halves, on the bone with skin (2 pounds total)
Heat oven to 375.
Place chicken in 9-inch baking pan. Loosen skin with fingers. Spoon half of chile mixture underneath skin. Spoon remainder over top.
Bake in 375 oven to 40 to 45 minutes or until no longer pink near bone.
Divide sauce among 4 plates. Top each with chicken breast.
Sauce
10 tomatillos, papery skin removed
1/4 cup chicken broth
2/3 cup diced onion
2 cloves garlic, cut in half
1/2 teaspoon salt
1 tablespoon oil
1/2 teaspoon adobo sauce, from can
Puree tomatillos, broth, onion, garlic, sauce in blender or food processor. Pour into saucepan. Simmer for 12 minutes to blend flavors.
