Basted Dates and Basted Rice
3 tablespoons butter or margarine
1 cup rice, uncooked
1 (14 1/2-ounce) can vegetable broth
1/2 cup chopped dried tomatoes
1 teaspoon dried parsley flakes
1/2 teaspoon salt
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cumin
1/2 cup chopped dates
1/4 cup pine nuts or slivered almonds, toasted
Melt butter in a medium saucepan over medium-high heat; add uncooked rice and cook, stirring constantly, 1 minute.
Add broth and next 5 ingredients; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is tender. Stir in dates and nuts.
